Black Bean Southern Burger

By popular demand....... my tasty and healthy burgers and fries! I know your thinking "It cant be true! Vegetarian burgers always fall apart and are not very satisfying". Not any more friends, not any more....
Please note that these pictures were taken the following day of leftovers so they look less impressive than freshly cooked!

Ingredients:
1 can black beans, drained and rinsed
1/2 onion, diced
2 cloves garlic, diced
2 eggs*, organic and farm fresh of course!!!
1 packet of taco seasoning
1 Pasilla Pepper
1 cup panko bread crumbs (reg. would be fine too)

*To make these burgers vegan, use any egg substitute. 

1. Mash the beans and add all ingredients to the beans. Make sure everything has mixed thoroughly.
2. Form patties of your desired size, remember since they are not full of fat like reg. beef patties they will not shrink when you cook them.
3. Warm a small amount of olive oil in a frying pan or skillet on medium heat. Cook each patty for about 5 minutes or until browned on each side.
4. Serve on a whole wheat bun with toppings and sides of your choice.

**You could grill these burgers easily also**


As you can see, I sprinkled some mozzarella cheese on mine and topped with lettuce, tomato and avocado. I served with some oven roasted fries.

For the fries, just cut your choice of potatoes into wedges, lightly coat with olive oil and sea salt and bake in the oven on 400 for about 20 mins, turning half way through.
Once cooked sprinkle with red pepper flakes and fresh basil.


This meal is packed with protein, vitamins and lots of feel good power!
